Pay More, Eat Less: Quality Over Quantity

The Freedom FixToday’s mega-market carrot is not the same nutrient-dense vegetable as our grandmother’s or even mother’s carrot.   Brian Halweil, a researcher for Worldwatch, writes “American agriculture’s single-minded focus on increasing yields has eroded the nutritional quality of our food.” The USDA shows a substantial decline in the nutrient content of the crops it has tracked since the 1950’s. A piece of produce from a high yield farm simply does not have the same nutrition per calorie as that from a small farm. We’ve also learned that plants grown with industrial fertilizers are often nutritionally inferior to those grown in organic soils. Support the small farmer and shop organic; you are worth the extra cash!
